My friend Mara made this for me when we were in College and I have loved it ever since. It is light and filling. It is also good warm or cold. Even my husband who loves meat likes this pasta a lot.
Bow tie pasta
Catalope and honeydew mellon
Poppy seed dressing
Mozzarella or Feta
While boiling a pot of water cut up the mellon in to cubes and set aside. I only used Catalope since it was on sale.
Once the pasta is cooked, drain the water, and place the pasta in to a bowl. Add half a bottle of Poppy seed dressing until the pasta is coated. Toss in the fruit, and chesse and mix. Serve immediatly and or chill it and serve it later. 🙂 I forgot to add the Cheese but I tossed it in with the pasta when I remembered.
