Baked shells with four cheese filling and Italian meat sauce


This was so good and it was very filling! We only added Italian sausage.  It was a little labor intensive when it came to filling the shells but it was worth it. This was the first time I was able to use my kitchen aid and it mixed the filling so well and in no time flat! I am so amazed and thrilled at how well my mixer performs!

Baked Shells with four cheese filling and Italian meat sauce

** Prepare 12 ounce package of Meijer jumbo shells according to package directions

Four cheese filling

32 oz. ricotta cheese

1/4 cup Parmesan cheese grated

1/4 cup Romano cheese grated

8 oz mozzarella cheese shredded

2 eggs beaten

1 Tbsp parsley chopped

1/2 tsp white pepper

1/2 tsp salt

Combine all ingredients in a large mixing bowl. Hand mix with a wooden spoon until smooth. Place cheese filling in refrigerator until well chilled. Put 1/3 cheese mixture in 2 quart plastic bag, cut the corner of the bag and squeeze cheese filling in to shell. Repeat until all shells and cheese mix has been used.

Italian Meat Sauce

1/3 cup olive oil

1 cup bell pepper diced

1 cup onion diced

1 1/2 Tbsp garlic minced

1 Ib Italian sausage sliced

1 Ib lean ground beef

1 Tbsp Italian seasoning

1 tsp salt

1 tsp black pepper

48 oz spaghetti sauce home made or jar

Put olive oil in large preheated pot, add bell peppers, onion and garlic. Saute for 5 minutes. Add Italian sausage and cook for 8 minutes. Add lean ground beef, Italian seasoning, salt and pepper to pot. Cook and stir well until ground beef is cooked. Stir in spaghetti sauce. Simmer sauce for 15-20 minutes and remove from heat.

Assembly

Lightly oil 2 casserole dishes. put 1/2 cup Italian meat sauce in casserole dishes and smooth out evenly. Place shells on sauce, cheese side down. Pour remaining sauce over shells and bake in oven at 350 degrees for 45 minutes. Remove from oven and serve immediately. Serves 4-6.
