We live in Michigan so naturally we get a lot of snow this time of year. When we left for Mejiers today the weather map showed we were in a clear zone ! When we finished shopping for the few small items we needed we were in the blue zone ie. snowing like crazy and getting worse by the minute. So naturally I am staying indoors for the rest of the day. I bought 1 Ib of fresh baby spinach earlier this month for a North Woods Bean soup. I only needed a few hand fulls and I was left with a whole lot of spinach. Over the last few days I have been using spinach on sandwiches, and roll ups. I thought I would use the half of the remaining spinach for a dip. The rest will be used for a salad tomorrow.
Wow this dip has a kick to it! I took a basic spinach dip recipe and completely changed it.
1st You will need to mince 3 cloves of garlic and chop 1 scallion.
2nd Chop up spinach in blender – 10 ounces (give or take) chopped fresh baby spinach (Awesome trick we learned from Grandma W! Put the Spinach in the Blender, add water and pulse till chopped! Then strain out the water. It works like a charm)
In a mixer with paddle attachment: Put all the ingredients in the bowl!
1 cup sour cream
1/2 cup mayonnaise
1 teaspoon chopped fresh thyme
1 tomato, diced
2-3 handfuls of Mozzarella cheese
Mix the ingredients until incorporated!
Pepper and salt to taste and enjoy!
