Asian Beef-Noodle Salad

I have been waiting to make this recipe for a while. This has quite a kick to it and is a quick meal when you do not have a whole lot of time. This has loads of vegetables and my favorite has to be the sweet peas. I wish mango was in season because I would have made the fresh fruit salad along with it. Instead of using the microwave I used my wok to heat up everything.

Asian Beef- Noodle salad

1 pkg bean threads (cellophane noodles)

8 oz sliced deli roast beef, cut lengthwise into thin strips

1/2 cup julienne cut carrot

1/2 cup low sodium Teriyaki sauce

2 T fresh life juice

2 t dark sesame oil

2 t chile paste w/ garlic

1/2 t bottled fresh ground ginger

6 cups torn spinach

1/4 c chopped fresh cilantro

1. Cover noodles with boiling water in a bowl. let stand 15 min or until tender ; drain.

2. Combine beef, snow peas, and carrot in a microwave safe bowl. Combine Teriyaki sauce and next 4 ingredients , and pour over beef mixture. microwave at high 2 min or until thoroughly heated. Add noodles; toss well. Serve over spinach. Sprinkle with cilantro.
