Four Years Together: creamy stove-top Macaroni and cheese


Brian and I celebrated being married for four years on June 5th. Our plans went up in smoke due to illness and rain. We were planning on going to the beach after my field work on Thursday, and having a picnic. It rained and so we decided to stay indoors. We thought we would just celebrate indoors. However, Brian was feeling under the weather, and progressively became worse. I made my self a sandwich with deli meats, cheese, lettuces and tomato, and the mac and cheese. Since, Brian wasn’t feeling well I did not prepare everything that was planned. Instead I decided to do the dishes, laundry, and clean the house.

I did come home to flowers in the vase. This was very special for me, because the only other time I have received flowers from my husband was on our first valentines day seven years ago.

While none of our plans worked out the pasta I made came out wonderfully. I plan on making the seven layer salad tomorrow.

Serves:  6 servings for the Mac and cheese at 1 1/2 cups per serving

Creamy stove top macaroni and cheese

4 C uncooked medium elbow macaroni (I used Penne)

3 T AP flour

1 t salt

1/4 t black pepper

2 1/4 cups fat free milk

1/4 C 1/3 less fat cream cheese, softened

2 t Dijon mustard

2 t Worcestershire sauce

1/2 t bottled minced garlic

1 1/4 C shredded reduced fat cheddar cheese

1. Cook pasta according to package directions, omitting salt and fat. Drain and set aside.

2. While pasta cooks, combine flour, salt, and pepper in a large saucepan. Add milk; stir with a whisk. Drop cream cheese by teaspoonfuls into milk mixture; bring to a boil over medium high heat, stirring constantly. Reduce heat; simmer 2 minutes or until thick and cream cheese melts, stirring occasionally. Stir in mustard, Worcestershire sauce, and garlic; simmer 1 minute. Remove from heat. Add cheddar cheese, stirring until cheese melts. Combine pasta and cheese sauce in a large bowl; toss well.
