Parmesan Chicken and Rice Casserole

This was wonderful to drink before and during my meal.

Cooking spay

2 garlic cloves, minced

2 bags boil in bag brown rice (I used regular brown rice and cooked till part way done)

1/3 c dry white wine

8 skinless, boneless chicken thighs

1 1/2 t chopped fresh thyme

2 c chicken broth

3 T whipping cream

1/3 c shredded Parmesan cheese


1. Preheat oven to 450

2. Heat a large skillet over med high heat; coat with cooking spray. Add onion to pan; saute 2 min. Add garlic, and saute 30 sec. Remove rice from bags; add to pan. Saute 30 sec. Stir in wine; cook 30 sec or until liquid almost evaporates (if using reg. brown rice add 2 cups water and cook till rice finished) Spoon rice mixture in an even layer into a 13X9 in baking dish coated with cooking spray 3. Arrange chicken thighs in a single layer over rice mixture; sprinkle evenly with thyme and salt. Combine broth and cream, stirring well; pour over chicken and rice mixture. 4. Bake at 450 for 15 min. Sprinkle with cheese. (we had to bake it until the chicken reached 165 degrees). Sprinkle with cheese. Bake an additional 5 minutes or until chicken is done. Yield; 4 servings ( serving size 2 chicken thighs and 1 cup of rice)

This meal was wonderful! It was great to get back into the kitchen with some great music and wine. I hope that you enjoy this meal as much as my husband and I did! You should know that the rice was a tad dry, but if you add some butter it helps. The best part was making a meal for my husband. Bon Apatite
