The Baking Illustrated Challenge

7 Layer Bars

Ingredients
1 C sweetened flaked coconut
8 T unsalted butter
9 graham crackers, crushed
1 C finely chopped walnuts
1 C semisweet chocolate chips
1/2 C white chocolate chips
1/2 C butterscotch flavored chips
1 (14 ounce) can sweetened condensed milk

1. Heat oven to 350 with rack in middle position. Line a 13 by 9 with alluminum foil, and spray with cooking spray.
2. Toast coconut until lightly brown, set aside. Place butter in pan and melt in oven. Remove pan from oven and add crushed graham cracker crumbs over melted butter. Toss until butter is absorbed and evenly distributed. Layer in order walnuts, chocolate chips, white chocolate chips, butterscotch chips, and coconut over gram crackers. Pour condensed milk evenly over the entire dish.
3. Bake until golden brown around 25 minutes. Cool, remove from pan, slice, and serve.

These were very sweet, and rich. I was amazed at how simple these bars are to make. It took me a while to figure out that they were counting the gram crackers and the condenced milk as layers to create 7 layers. I was glad to be able to use up my cocoanut, which doesnt go very quickly in our house.
